2021 California First Harvest Extra Virgin Olive Oil
Welcome to our California 2021 First Harvest. The oil inside this bottle is the result of hundreds of hours of painstaking labor and farming that have resulted in this truly incredible and unique First Harvest offering.
The olives used to create this oil come from our flagship grove in Yolo County California and boast some varieties of olives that are not seen anywhere else in the state such as Picudo, Cerasuola, Nocellara, Picual, Coratina and Manzanillo. These olives were monitored and harvested several weeks earlier than our regular harvest to capture the robust and ultra-fresh juice within. This practice results in a lower oil yield, as the olives are not fully mature, but for our limited edition First Harvest it is all about quality over quantity so that we can truly show off our skills.
Shades of emerald and lime green colors let us know about the intense fresh and herbaceous notes that we will discover. The aroma is incredibly and deliciously complex. Fragrances of freshly mown grass, peppermint, citrus, almonds, and green tropical fruits all blend harmoniously.
The entrance in the palate is sweet, pleasingly bitter and with firm spiciness that develops over time.
The aftertaste is amazingly clean, balanced, and harmonious in all its gustatory olfactory attributes leaving our mouth with reminiscence of vegetables such as green tomatoes and artichoke.
This oil would make a fabulous addition to any dinner party accompanied by a fresh crusty baguet or a simple caprese salad. This oil shines as a topper to any meaty dish and you only need a sprinkle of salt and pepper to accompany it. The Picudo olive is a Spanish variety that, in our opinion, is one of the most unique looking and tasting olive out there. This was the first time that we had experimented with planting this variety and we could not be more excited by it. The fruit is large and has a great oil content to flesh ratio, making it a millers dream. This variety makes a medium to pungent oil that is extremely fruity with lower bitterness. It carries notes of green apple and olive leaf.
The Nocellara olive is from the south of Italy where it is commonly used for both for table olives and for olive oil. The oil is on the milder side when left to ripen but harvested early it is crisp and fruity with pleasant notes of artichoke and fresh cut grass.
The Picual olive originates in Spain, where it is one of the most widespread varieties, and it is also one of Cobram Estates tried and true varieties. We absolutely love the amazing green tomato fragrance you get when the oil is harvested early and this tends to be one of our most award winning varieties for its fruitiness and balanced palate.
The Coratina variety is another Cobram Estate favorite. The trees originate from the Puglia region in the South of Italy and the oil is prized for its robust profile. We love it because of its tropical nose and robust grassy flavor. We can never get enough of this oil and we love what it adds to our First Harvest.
