What is extra virgin olive oil?

Put simply, extra virgin olive oil is the highest quality oil and is purely the freshly squeezed juice of an olive.  Extra virgin olive oil is extracted mechanically, meaning it is 100% natural. Unlike refined oils such as canola oil, vegetable oil and anything labelled as simply ‘olive oil’, extra virgin olive oil is not refined or extracted using chemicals or high heat. This means it retains the natural health promoting antioxidants, polyphenols and other bioactive compounds found in the olive fruit.

Extra virgin olive oil is widely considered to be one of the healthiest oils in the world, due to its fat profile and significant levels of bioactive compounds. No other oil contains the diverse range of plant compounds and antioxidants in the amounts found in extra virgin olive oil. Barbara Ruhs is a nationally recognized nutrition leader and the USA Lead Dietitian for Cobram Estate Olives. As founder of MarketRD™, a marketing communications agency, she has shaped nutrition strategies for some of the world’s most respected food brands and commodity boards, including USA Pears, Avocados From Mexico, and The Unique Mānuka Factor Honey Association of New Zealand.

A passionate advocate for evidence-based nutrition, Barbara previously served as a nutritionist at Harvard University and is frequently quoted in national media as a trusted voice in food and health. Her experience as a supermarket dietitian sparked her mission to elevate the role of credentialed nutrition professionals within the food industry, driving transformative change in how nutrition expertise is integrated into consumer education.

Barbara holds an M.S. in Nutrition from Boston University and a B.S. in Nutritional Sciences from Cornell University.
