Producers must submit samples of their oil to a laboratory for both chemical analysis and sensory evaluation to qualify for this designation. Cobram Estate is lucky enough to be able to do this internally as well to ensure quality in every bottle, often exceeding the requirements mandated by third-parties. In addition, California EVOO typically reaches the market faster than imported oils, meaning they may be fresher when purchased. Freshness is crucial for EVOO quality, even as a packaged good. Finally, Cobram Estate implements a vertically integrated process using advanced harvesting and processing techniques, including rapid harvest-to-milling times—4 to 6 hours—which helps preserve oil quality.
