Ingredients
half minced shallot
1/3 cup Cobram Estate Lemon Extra Virgin Olive Oil
salt & pepper to taste
1 lb asparagus, trimmed & sliced into 2-inch pieces
1 tbsp Cobram Estate Classic Extra Virgin Olive Oil
1/2 cup roasted, salted pistachios
1/2 cup chopped dill & parsley
3 oz. crumbled feta
Directions
- Combine shallot, Cobram Estate Lemon EVOO, salt, and pepper in a glass jar and set aside.
- Heat a drizzle (roughly 1 tbsp) of Cobram Estate Classic Extra Virgin Olive Oil in a pan over medium heat and cook asparagus for 5 minutes until it’s tender but still crisp!
- Add a pinch of salt to season and transfer to a bowl. Add your pistachios, fresh herbs, feta, and dressing! Toss, serve, and enjoy!
