Garlicky Parmesan Mashed Potatoes

– 1/3 cup Cobram Estate Garlic Flavored Extra Virgin Olive Oil

– 2 pounds potatoes, preferably Yukon Gold, Russets or another waxy potato

– 1/2 teaspoon salt , plus more to taste

– 1/3 cup milk, heavy cream or a dairy free alternative

– 1/2 cup parmesan cheese

– 3 tablespoons butter

Boil the Potatoes:

Place the potato chunks in a large pot and cover with cold water. Add a pinch of salt to the water. Bring to a boil over medium-high heat, then reduce to a simmer. Cook until the potatoes are tender and easily pierced with a fork, about 15-20 minutes. Drain the potatoes and return them to the pot.

Mash the Potatoes:

Use a potato masher or a ricer to mash the potatoes until smooth. Now time for the flavor. In a small saucepan, heat the milk, cream or dairy alternative until warm (do not boil). Gradually add the warm milk and cream mixture to the mashed potatoes, stirring to combine.

Mix in the Garlic Flavored Extra Virgin Olive Oil:

Drizzle in the Cobram Estate Garlic Flavored Extra Virgin Olive Oil, stirring until fully incorporated. Season with salt and black pepper to taste.


Transfer the garlic mashed potatoes to a serving bowl. Garnish with chopped fresh parsley or a handful of grated parmesan, and finish in the broiler for a crispy top.
